Inspired by everything from tangy Bombay street snacks and home-style Punjabi curries to the exotic vegetarian and seafood delicacies of Southern India, each dish tastes as good as it looks. Distinctive flavours and authentic recipes from across India, done the Delhi deli way – either roasted in our special clay ovens (tandoor), slow-cooked in a traditional copper pot (haandi) or stir-fried on an iron griddle (Tawa).
